Red Wine Mushroom Sauce

Remove from the pan then set aside to rest.

Stir into the mushrooms until well blended. Pour in the wine and bubble until syrupy then turn off the heat and stir in the butter. Cook the mushrooms for 5-7 minutes until they start to brown and the liquid starts to evaporate.
Deglaze the pan with red wine and scrape the bottom with a spatula to remove all the tasty bits. Meanwhile in a sauté pan heat the remaining 1 tablespoon of olive oil over medium heat. Cook stirring for 1 minute more.
Add the salt and pepper. Add the mushrooms salt and pepper to taste and sauté until the liquid has evaporated and the mushrooms are browned and softened about 5 minutes. Remove from heat and stir in butter.
